Recipe: Quinoa Summer Salad

This is a super delicious summery salad and very easy to make.

Plus it will make you feel a-mazing with all the goodness – it’s packed with vitamins and minerals from all the different veg, healthy fats from the avocado, as well as pplenty of fibre, a bit of protein, and more quality nutrients from the quinoa.

And it looks pretty with all the colours 🙂

Could be a great option to take to work too, or serve up for dinner with a piece of salmon or chicken…

Here’s how to make it:

 

Ingredients (serves 2)
  • 80g quinoa (dry weight), or a sachet of pre-cooked quinoa if you want to save time
  • Zest and juice of half a lemon
  • 1 medium avocado
  • 10 sundried tomatoes
  • half a cucumber
  • 2 vine tomatoes
  • 8 – 10 sundried tomatoes
  • any other optional veg – either leftover or pan fried while quinoa cooks (I had some leftover roasted carrot and courgette)

 

Instructions

If cooking the quinoa, pop it in a pan of boiling water, and allow to simmer for 15-18 minutes, stirring every now and then.

While that’s cooking, prepare the rest of the salad by chopping everything up and mixing together.

Once the quinoa is ready, pour it into a sieve and run under lukewarm water to cool it down. Pop it back into the empty pan, mix in the lemon zest and squeeze over half of the lemon juice. 

Mix that all together, then add the quinoa to the salad, squeeze in the remaining lemon juice, season with salt and pepper, and mix again. Serve up onto two plates (or pop half into your lunchbox if you’re saving it for tomorrow) and tuck in 🙂
