Happy Pancake Day!
To celebrate one of my favourite days of the year, two of my favourite protein pancake recipes are below.
Nothing wrong with the traditional flour, eggs and milk of course, but if you’re looking for a healthier option, protein pancakes are really easy to make and packed with nutrition.
They feel like a real treat but actually make a very decent meal that will keep you full and energised for hours.
To make the vanilla stack above you need:
1 banana
1 egg
1 scoop vanilla protein powder
Blend it all together (batter should be runny but a little thick – little bit of coconut flour can thicken it well if needed and pour into 4 little pancakes.
Fry for 2-3 minutes until set enough to be flipped, then flip ’em and briefly cook the other side.
Et voila
I topped mine with Liberte Greek yogurt, banana, strawberries, and drizzled with Sweet Freedom fruit syrup. Delicious!
CHOCOLATE PANCAKES
Slightly ‘naughtier’, but only because I drizzled them in Biscoff spread…
Very similar easy recipe though:
1 banana
1 egg
1 scoop choc protein powder
1 tbsp cacao / dark cocoa powder
1 tsp sweet cinnamon
Blend everything together and pour into 4 small pancakes, in a pan well sprayed with frylight. Fry for a couple of minutes until set enough to flip, then turn them all over and briefly cook the other side.
Serve up with your favourite toppings and enjoy 😁
