My favourite breakfast of the moment!
I absolutely love protein pancakes and these chocolate brownie ones are just AMAZING.
The variety of toppings really helps too 🙂
A number of people asked me for the recipe after seeing the photo on facebook and instagram, so here we are:
You will need:
30g rolled oats
2-5tbsp unsweetened almond milk
1 scoop myprotein chocolate brownie whey protein powder (http://www.myprotein.com/sports-nutrition/impact-whey-protein/10530943.html)
1 tablespoon cacao powder (basically raw cocoa powder, can be found in the baking aisle at most supermarkets or in health food stores, not very cheap but soooo good)
1 tablespoon coconut flour (can be found in holland and barrett, health food stores and on amazon, not essential but really makes a difference to the texture)
Blend everything up except the milk, and then add enough of that in to create a fairly thick pancake batter.
Using some 1 cal spray for the pan can be good for this one to avoid adding extra calories, but a bit of coconut oil is fine too.
Pour half the mixture into the pan to make two separate pancakes, fry for a couple of minutes on a medium-high heat, flip and remove once cooked.
Repeat with the other half of the mixture.
Then add your toppings!
For the toppings, I love a bit of variety so went for these options –
Yeo valley 0% yogurt on two of the pancakes, one topped with blueberries and the other with strawberries
Banoffee flavoured almond butter (this can be ordered online but you could also use normal almond butter or peanut butter)
Nutella (nothing healthy about this, just delicious!)
