This is such a delicious salad, and a big plate of food for just over 250 calories.
Usual fig and goats cheese recipes often contain walnuts and honey as well; I opted to leave these out as the fat and sugar from these would dramatically bump up the calories. A chopped up pear adds a nice bit of texture, and apple cider vinegar for the dressing keeps it low calorie and ultra nutritious while still having a delicious flavour.
Admittedly there’s not a lot of protein here, but a pot of greek yogurt for afters would sort that out, or this could balance out a day that’s higher in protein elsewhere.
Ingredients
- 100g fresh figs
- 50g goats cheese
- Half a pear, chopped
- Iceberg lettuce leaves, torn or shredded
- Tbsp apple cider vinegar
Instructions
Cut the figs into quarters and the goats cheese into small chunks or slices, and place under grill on a sheet of baking paper.
Grill for around 5 minutes until the cheese is melted and the figs start to caramelise.
Toss the lettuce leaves and pear with the apple cider vinegar.
Arrange on a plate and pop the figs and goats cheese on top.
