RECIPE – a DELICIOUS and healthy dessert!

Amazing fruit tart
This is a really tasty healthy dessert you can create to impress friends (or just enjoy yourself)
I’ve always found it really hard to find healthy desserts that actually taste good.
They’re usually either packed with sugar or fat (normally both), or they’re just a fruit salad (and that doesn’t seem like much of a treat)
These little beauties taste awesome, and they feel like you’re having an actual fruit tart.
Making this recipe instead of a standard fruit tart cuts out the refined sugar, flour and butter, and replaces it with lower calorie natural sweeteners (agave nectar and vanilla extract), plus super healthy fats from the coconut oil and the dessicated coconut/chia seeds.

To make 4 fruit tarts, you will need:
Approx 60g Granola (Jordan’s Simply Oat Granola is one of the best in terms of calories, fat and sugar content)
2 tablespoons coconut oil (melted)
1 tablespoon honey/agave nectar
2 170g pots of Total 0% fat greek yogurt
2 teaspoons vanilla extract
Strawberries / other fruit of choice for the topping
Dessicated coconut / chia seeds to garnish
To Make:
Preheat oven to 180 degrees C
To make the crust, blend granola, coconut oil and honey/agave nectar in a food processor until granola crumbs are the size of small grains
Smear a very thin layer of coconut oil around the base and edges of 4 ramekins
Add a quarter of the mixture to each ramekin and press firmly into the base and sides (I used the bottom of a glass to help do this and create the shape)
Bake the crusts for 12 minutes
Remove crusts from oven and allow to cool completely or overnight
Add a teaspoon of vanilla extract to each pot of yogurt and stir in well
Fill each shell with the yogurt (around half a pot of yogurt should fill each case)
Top of the tart with nicely arranged fresh chopped strawberries or fruit of choice
Drizzle a teeny tiny bit of agave nectar over each one to glaze (this is optional but I did it and it adds a little shine)
Sprinkle dessicated coconut / chia seeds to make it look even prettier 🙂
