A lot of the ladies who I work with, and those in my free facebook group (Health, Fitness and Weight Loss for Women) are keen to find some healthy snack ideas. So I’m on a mission to make some!
These muffins came out really well, very good nutritionally and only around 60 calories each – result!
Plus they manage to get fruit AND veg into a snack that tastes like a treat.

This is a very quick and easy recipe (I don’t do complicated).

INGREDIENTS
- 1 apple, peeled and grated
- 1 medium carrot, grated
- 2 eggs
- 2 scoops vanilla protein powder
- 2 tsp cinnamon
- 80g Total 0% greek yogurt
- 30g coconut flour (can probably be subbed for a different flour with similar results)
- 30g Sukrin Gold (can substitute for 50g Xylitol)
- 1tsp ginger
- 1tsp baking powder
- 1/4 tsp bicarbonate of soda
- 20g chopped walnuts (plus extra for placing on top)
INSTRUCTIONS
Blend everything except the apple, carrots, and walnuts together.
Stir in the apple, carrots and chopped walnuts.
Spoon mixture evenly into 10-12 muffin cases.
Place a walnut on top for decoration if you fancy 🙂
Bake in the oven at 170 degrees C for around 25 minutes (I cooked mine at 180C for 20 minutes and the tops burned a little, so hopefully this is a good adjustment).
Allow to cool and enjoy!

Next time I might try adding some icing to the top of these by mixing some options hot chocolate powder with a teeny bit of greek yogurt to make a chocolatey paste. Not for everyone but great for those with a sweet tooth!
These keep well in an airtight container in the fridge for 2-3 days (but probably won’t last that long).
