This is probably my favourite protein baking recipe.
Really tasty and really easy to make. Occasionally I tweak the recipe, take some new photos (working on improving my food photography skills – good excuse to do more baking đŸ˜‰ ) and bring in a batch for my clients to try. I did this last week and posted a photo on my facebook page. Since then I’ve had a few requests for the recipe so I thought I’d share it with you here.
It’s from my Healthy Recipe Ebook, (Now just £5 – click HERE) and is the most popular choice from the dessert / sweet treats section (although the chocolate brownies come a very close second).
Unlike a lot of protein recipes, which easily go dense and dry, or taste too artificial, you can pretty much bank on this one to turn out well.
It just always works. Comes out nice and soft, not too dense, not too dry, not overpoweringly sweet, just yum.
The berries really add a nice fruity sweetness to it as well.Â
You can do this with a few different flavours – vanilla works really well, but one of my clients tried this recipe with her Belgian chocolate protein powder and said it was delicious too.

Ingredients
3 bananas
3 eggs
2 tbsp coconut flour
½ cup oats
½ cup vanilla protein powder
½ cup unsweetened almond milk
½ tsp baking powder
100g frozen berries

Instructions Â
Whisk all ingredients except the berries together and pour into a loaf tin lined with baking paper.
Now for the fun part – add the berries by literally throwing them in so that some reach the bottom and others sit nearer the top so you get an even spread through the loaf.Â
Cook for around 35 mins at 180C.
This should make 10 very tasty, healthy and satisfying slices…
